Creamy Italian Sausage+ Gnocchi Soup

Got this recipe off of Instagram! Wonderful fall dish that was easy to make. I don’t think I get to eat Gnocchi enough, so this was very exciting for me. Inexpensive recipe too! Highly recommend

Ingredients

  • 1 lb. mild Italian sausage
  • 1 package gnocchi
  • 1 tbsp tomato paste
  • 1 tsp black pepper
  • 1 tsp crushed red pepper flakes
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp olive oil
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp salt
  • 2 cups half-and-half or heavy cream
  • 2 tbsp minced garlic
  • 3 oz grated Parmesan cheese (I like freshly grated it melts better IMO)
  • 3-4 cups low-sodium chicken broth
  • 8 oz bag spinach, roughly chopped

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add minced garlic and sauté for about 30 seconds, until fragrant.
  2. Add Italian sausage and cook, breaking it up with a spoon, until completely browned and cooked through.
  3. Add all seasonings and tomato paste. Stir until well combined and cook for 1-2 minutes.
  4. Pour in chicken broth and bring to a boil. Add gnocchi and cook for 3-5 minutes, or according to package directions.
  5. Reduce heat to low and stir in the half-and-half and Parmesan cheese.
  6. Stir in the chopped spinach and allow it to wilt.
  7. Let everything gently simmer for about 10 minutes, stirring occasionally, until the soup has thickened and become creamy.
  8. Serve warm with extra Parmesan on top, if desired. Enjoy!
