Lazy Weeknight Chili

Super easy and tasty weeknight chili, especially if you are WFH. Had a chuck roast i needed to cook with limited ingredients.

Lazy Weeknight Chili

Ingredients

  • 1 can chipotle peppers in adobo sauce
  • 1 can whole tomatos
  • 1 lb chuck roast
  • Beef boullion
  • Black Beans
  • Frozen corn

Instructions

  1. Start by trimming beef roast cutting off hard fat parts, make sure to reserve the fat. Cut beef into 1 inch cubes.
  2. In a pot heat on medium, add the beef fat trimmings to pan with no oil. let the fat start to render, adding a little water and covering helps produce more fat quicker from steaming.
  3. While the fat renders for maybe 10 minutes. Lightly salt your beef cubes.
  4. Remove trimmings and sear beef cubes, make sure not to crowd pan. Remove beef.
  5. In same pot deglaze with boiling water. Add roughly 3 tsp of beef boullion. Let come up to a simmer. Then add beef and let simmer for 1 hour.
  6. After 1 hour of simmering, blend 1 can of chili in adobo and add to pot to simmer some more. Let simmer for another 45 minutes.
  7. Add 1 can of tomato’s and crush and mix in well. Add powders: garlic, onion, paprika, black pepper, and salt to taste.
  8. Let simmer for another 15-25 minutes. A couple minutes before finishing add corn and beans.
  9. Plate with sour cream and cheddar cheese.
