Southwest Shrimp & Cauliflower Grits
Super easy to make and healthy shrimp and grits. I was pretty skeptical about the cauliflower grits, but happily impressed! Can do 4 servings at 38g protein, 6g fat, 9g carbs and 246 total calories each. Could also go well with Cajun style seasoning or another fun shrimp mix. Ingredients
- 1 cup chicken broth
- 1 large cauliflower head cut into the florets
- 1 Shallot/chive
- 1 tsp garlic powder
- 1 tsp paprika
- 1.5 lbs large shrimp, peeled
- 2 tbsp southwest seasoning
- 2 wedges of light laughing cow cheese
- 3 garlic cloves, minced
- Olive oil
Instructions
- Boil cauliflower and garlic cloves 10-12 minutes until cauliflower is tender. Drain thoroughly
- Blend cauliflower with chicken broth and laughing cow cheese until smooth. Season with salt, pepper, and garlic powder if you want more garlicky flavor
- Toss shrimp with southwest seasoning, paprika and garlic powder
- Heat skillet on high and heat some olive oil. Sear shrimp 1.5 minutes per side roughly until it is pink with charred edges
- Spoon cauliflower grits onto platter and serve with shrimp on top. Garnish with cut scallion/chive. Enjoy!
