Sirloin Quinoa Power Plate

Really nutritious and delicious dinner I made last night! Not too difficult to make, but I used some dehydrated vegetables in my quinoa that made a huge difference

Sirloin Quinoa Power Plate

Ingredients

  • Avocado
  • Chicken stock
  • Dehydrated veggies
  • Garlic
  • Lime
  • One ear of corn
  • Parsley
  • Quinoa
  • Salt
  • Sirloin steak

Instructions

  1. Put a pot of chicken stock down and get it boiling before adding in dehydrated veggies
  2. After veggies start to properly rehydrate, add quinoa and reduce to simmer and cover until cooked through
  3. Let sirloin sit out and come to room temp
  4. Shuck an ear of corn before open roasting it over a fire or on a gas stove/grill. When done, cut kernels off into a bowl. Toss with paprika, salt, garlic and onion powder with a little bit of lime juice freshly squeezed
  5. In a blender or by hand, roughly chop parsley and garlic together and mix with freshly squeezed lime juice
  6. Sear the sirloin on both sides to preferred temperature
  7. To plate, cut and spread sirloin strips and top them with the parsley and garlic chimichurri. Scoop in the quinoa and veggie mix alongside the corn. Cut an avacado into strips and place on remaining space
  8. I had some pickled onions sitting around so I added those for some extra flavor and contrast. Enjoy!
