Lazy WFH Lunch
High Fiber, Solid protein lunch.
~30 grams protein
~20 grams fiber

Ingredients
- 1/4 cup chopped onion
- Black Pepper
- Can of Black Beans
- Can of smoked Mackeral
- Cumin
- Garlic Powder
- Hot Sauce of your choice
- Olive Oil
- Salt
- Vegetable stock
Instructions
- Drain beans. Rinse beans. Add 1 tbsp olive oil to pan on medium heat. Sauté Onion.
- Add Beans to pan and season.
- Cook for 5 minutes. Add 1/2 cup boiling water with vegetable bouillon or stock. Let water evaporate or until thin sauce.
- Plate with hot sauce and canned fish of your choice. This was a Smoked Mackerel from Fishwife.
