High Fiber, Solid protein lunch. ~30 grams protein ~20 grams fiber

Lazy WFH Lunch

Ingredients

  • 1/4 cup chopped onion
  • Black Pepper
  • Can of Black Beans
  • Can of smoked Mackeral
  • Cumin
  • Garlic Powder
  • Hot Sauce of your choice
  • Olive Oil
  • Salt
  • Vegetable stock

Instructions

  1. Drain beans. Rinse beans. Add 1 tbsp olive oil to pan on medium heat. Sauté Onion.
  2. Add Beans to pan and season.
  3. Cook for 5 minutes. Add 1/2 cup boiling water with vegetable bouillon or stock. Let water evaporate or until thin sauce.
  4. Plate with hot sauce and canned fish of your choice. This was a Smoked Mackerel from Fishwife.
