Gazpacho

Perfect for a cold day in the hot heat in the Andalusian region of Spain where this dish originates. I added extra sherry, parsley and some pickled red onion to mine

Gazpacho

Ingredients

  • 1 1/2 tbsp sherry vinegar
  • 1 Cucumber
  • 1 Red Bell Pepper
  • 1 Red Onion
  • 1/4 cup olive oil
  • 2 garlic cloves
  • 7 Roma Tomatoes
  • Salt and pepper to taste

Instructions

  1. Add all the ingredients into a bowl together with rough chopping of all the vegetables. Remove the root end of the garlic, seeds of the pepper and peel the cucumber before chopping and adding
  2. Leave marinating at least 4 hours, but for more flavor leave up to 24 hours
  3. Blend and mix thoroughly to desired smoothness
