For pita bread: Mid 1/2 cup luke warm water with 1 tbsp of active dry yeast. Add 1/2 cup flour and 1 tbsp sugar and whisk. let sit for 10 minutes to activate. Add to a bowl with 2 cups flour, 2 tbsp olive oil, tsp salt, mix until shaggy. dough. On lightly floured work surface knead for a couple minutes until smooth. let rest for 10 minutes. knead again incorporating roughly 1/4-1/2 cup flour until smooth. cover with towel in an oiled bowl and rest for 1 hour or until 2x in size.
After resting punch it like Tyson.
Divide into 8 pieces. roll into balls and let rest for another 10. On a floured surface roll balls into 7-8inch patties. quiet thin. like 1/4-1/8 an inch:
Heat oven to 450-500F. Place cookie sheet with aluminum foil in to heat up. you can use a cast iron which i want to try next time. once hot. throw 1-2 pita doughs onto it roughly 2-3 minutes per side until its desired browness or bubbliness is reached. use tongs to flip. rest in a clean towel after baking.
For beef kofta: Mix 1lb 80% beef with 1/2 onion grated. 3 minced garlic. like 2/3 bundle of parsley. 1 tsp salt. black pepper to your liking. 1-2 tsp of sumac is important. cumin 1-2 tsp
mix very well by hand and then form into oblong 1.5 inch RODS of meat. place on sprayed oven sheet.
Bake at 425 for 15 minutes or until 165 internal AND OR golden brown and delicious. let rest a couple minutes.
For Hummus: blend 1 can of drained chickpeas, 2 garlic cloves, 1/4-1/3 cup tahini. 1-2 tbsp olive oil. lemon juice to taste. salt and pepper to taste. roughly 1/4 cup lemon juice. 1-2 tsp salt. while blending slowly stream in 3 tbsp of ice cold water while blending until desired texture reach. serve with paprika and a drizzle of olive oil.
For tzaziki sauce i did roughly 1/2 cup yogurt, 2 tbsp olive oil. 1/4 cup lemon juice. salt to taste. rest of the parsley. a lot of dill like prob 1/2 to 1 tbsp of dry dill. oregano to taste. and like 1/2 a cucumber grated and drained of water.
For the Falafel i followed the box recipe which was like mix 1/2 box with water. let rest for 10 minutes. form into balls with spoons and bake at 350 for 20 minutes.
Plate pita bread, kofta, falafel, sauces, with olives or feta or lettuce or tomato.
