Lemon Shrimp Orzo

Great one pot meal I made while at the beach with @Emma. Only needed a cutting board, knife, spatula and deep saucepan

Lemon Shrimp Orzo

Ingredients

  • 1 cup Orzo
  • 1 Lemon
  • 1.5 LBS Raw Shrimp
  • 1/3 cup Dry White Wine
  • 1/3 Cup Grated Parmesan
  • 1/4 Cup Heavy Cream
  • 2 Shallots, diced
  • 2 Tablespoons All Purpose Flour
  • 2 TBSP Chopped Dill
  • 2 TBSP Chopped Parsley
  • 3 cups Unsalted Chicken Broth
  • 3 Garlic Cloves, minced
  • 4 TBSP Unsalted Butter
  • Pepper
  • Salt

Instructions

  1. Melt two tbsp butter into a deep saucepan or Dutch oven and add in shrimp and one garlic clove and sauté for about 2-3 minutes
  2. Add in some lemon zest and half a lemon squeezed of lemon juice
  3. Melt the rest of the butter in the pan. Add rest of garlic and shallots sautéed about 3 more minutes
  4. Add in flour and whisk in for about a minute until browned
  5. Stir in wine and chicken broth. Mix in and then add in orzo
  6. Bring pot to boil, reduce heat to simmer and let simmer for about 6 minutes
  7. Stir in parmesan, heavy cream, lemon juice from other half, parsley, dill and then salt and pepper to taste. Adjust chicken broth to desired consistency
  8. Add in some extra lemon zest or cut lemon slices for more lemon taste
  9. Serve with extra cheese and enjoy!
