Menemen is an incredible Turkish breakfast with a rich, spiced tomato and pepper base loaded with eggs, smoky sucuk sausage, and crumbled feta. This meal prep version takes 30 minutes on Sunday and just 5 minutes every morning. Each serving delivers around 52g of protein and comes in under $9, making it one of the most flavourful and cost-effective high-protein breakfasts you can make. Doesn’t feel like a chore to eat and feels warm the rest of the day

Meal Prep Menemen

Ingredients

  • 1 large onion
  • 16 oz Feta Cheese
  • 20 eggs (4 a day)
  • 6 long green peppers
  • 8 large tomatoes, grated
  • Cumin
  • Olive oil
  • Parsley
  • Pepper
  • Pita
  • Red Pepper Flakes
  • Salt
  • Sucuk/Sujuk

Instructions

  1. I’d start by prepping the base on Sunday and splitting it into 5
  2. Heat olive oil in a large pan over medium heat. Add the onion if using and cook for 5 minutes until softened
  3. Add the peppers and cook another 5 minutes until they begin to soften
  4. Add the tomatoes, salt, pepper, red pepper flakes, and cumin. Stir to combine
  5. Simmer uncovered on medium-low for 15–20 minutes, stirring occasionally, until the mixture thickens into a rich sauce and most of the liquid has evaporated
  6. Let cool completely, then divide into 5 equal portions in airtight containers. Refrigerate
  7. Then do these next steps every morning - should only take about 5 minutes
  8. Heat a small pan over medium-high heat and add the sucuk slices. Cook 1–2 minutes per side until they release their oil and start to crisp
  9. Add your portion of the tomato-pepper base directly into the pan and stir it around in the sucuk oil. Heat for about 1 minute
  10. Crack in 4 eggs and stir gently, folding them into the mixture. Cook for 1–2 minutes until the eggs are just set but still custardy
  11. Scatter the crumbled cheese over the top and remove from heat immediately. The residual heat will soften the cheese
  12. Garnish with fresh parsley and serve straight from the pan with bread (preferably pita or a crunchy bread)
