Had leftover ingredients from other things I made this week and was very hungry so made these two dishes. The combination of ground beef and ground turkey in the quesadillas was incredible. I mixed a fiesta blend of cheese with some fresh grated cheddar which just made a good flavor. I made the salsa a few days ago with a lot of charred jalapeños
I did the turkey and beef in a separate pan together seasoned with cumin, paprika, cayenne, salt, garlic powder and onion powder
Did fiesta blend cheese with fresh grated cheddar cheese on either side of the meat inside the quesadillas before cutting them into 3rds after sealing on both sides
Fresh cilantro, squeezed lime and crema on top of the quesadilla pieces! Dip in the salsa for the best experience
For the chilaquiles I cut leftover tortillas into the 6 pieces each, fried them until well colored and crisp in Grapeseed oil. After letting them cool a minute, I tossed them all in the salsa I had remaining
Crema, lime juice, fiesta cheese blend and cilantro on top to finish it off!
