Protein Harissa Chicken Bowl/Wrap

Protein Harissa Chicken Bowl/Wrap

Ingredients

  • ¼ cup mint
  • ½ cup Greek yogurt
  • ½ cup parsley
  • ½ red onion
  • 1 cucumber
  • 1 tbsp olive oil
  • 2 lemons
  • 280g cherry/grape tomatoes
  • 3 tbsp harissa
  • 4 garlic cloves
  • 975g chicken thighs

Instructions

  1. Marinate chicken in harissa, garlic, lemon, oil & salt for 10 mins to 12 hours
  2. Toss diced cucumber, herbs, tomatoes & onion with lemon
  3. Mix yogurt, harissa, garlic & salt for sauce
  4. Sautée chicken in strips until cooked through about 10 minutes or less
  5. Fan chicken over salad, drizzle sauce on top
  6. Put in a wrap with a flat bread of some kind for a hands on way to eat this meal (I prefer this way)
