High-protein, low-carb North African-spiced chicken with a cool herb salad and creamy harissa yogurt drizzle. Bold flavors, ready in 30 mins. Add in a flat bread for a wrap for additional cal/carbs/protein dependent on what you like.

Ingredients
¼ cup mint
½ cup Greek yogurt
½ cup parsley
½ red onion
1 cucumber
1 tbsp olive oil
2 lemons
280g cherry/grape tomatoes
3 tbsp harissa
4 garlic cloves
975g chicken thighs
Instructions
Marinate chicken in harissa, garlic, lemon, oil & salt for 10 mins to 12 hours
Toss diced cucumber, herbs, tomatoes & onion with lemon
Mix yogurt, harissa, garlic & salt for sauce
Sautée chicken in strips until cooked through about 10 minutes or less
Fan chicken over salad, drizzle sauce on top
Put in a wrap with a flat bread of some kind for a hands on way to eat this meal (I prefer this way)
