Easy Weeknight Steak dinner

Ingredients

  • 1-2 flat iron steaks
  • 2 large Redskin potatos
  • Chili powder
  • Garlic powder
  • High heat cooking oil
  • Onion powder
  • Salt and Peppa

Instructions

  1. Preheat a Carbon Steel pan or Cast Iron pan, i used a heavy carbon steel pan. Heat on Medium heat, hot enough to hit roughly smoke point on your oil.
  2. Dry your steaks and Salt and let rest while pan heats.
  3. Slice potato into 1/4-1/4 inch thick fries. Toss in 1 tbsp of oil. Season with ~1 - 2 tsp of salt. season to taste for pepper, garlic, onion, and chili powder. Toss until evenly seasoned.
  4. In a preheated 400 degree air fryer on air fry setting, add 1/2 your fries or enough to not overcrowd your fryer.
  5. Cook fries for 15 minutes. flip them over half way.
  6. Once pan is preheated, pat steaks dry again, toss roughly 1-2 tbsp of high heat oil. i used avocado oil. let heat up a little, oil should be smoking a bit. if too much smoke remove pan and let cool a bit and lower heat on burner
  7. Add 1 steak and press hard in the middle to get a good sear, use weights if you have them on steak and press and keep them down. Flip steak roughly after 5-10 minutes depending on how well its browning. Cook for another 5-10 minutes on other side. Remove once internal temp reaches 135 roughly and let sit for 5-10 minutes to cool
  8. Slice and serve with fries
