WFH Chilaquiles

I normally make an egg taco for breakfast but only had Tortilla Chips. First attempt at making Chilaquiles. 9/10.

WFH Chilaquiles

Ingredients

  • 3 eggs
  • Cotija Cheese
  • Salsa (I used jarred Hatch Chile Salsa)
  • Tortilla Chips

Instructions

  1. Preheat pan on medium with a little oil. Whisk 3 eggs together until smooth with salt and pepper to taste.
  2. Once heated add eggs to pan, bottom should cook fast so you can pull the eggs from the edge of the pan to the center.
  3. Fold eggs and break it up to scramble. Once eggs are no longer runny and set, remove onto plate.
  4. Wipe pan with paper towel and put back on medium heat, add a spray of oil. Add roughly 1/3-1/2 cup of salsa. Add a splash of water to keep the consistency a little liquidy. Cook for 1-2 minutes.
  5. Add tortilla chips and try folding in salsa into chips as much as possible without breaking.
  6. Once salsa is mostly on chips and begins to soften. Add eggs back to pan and fold for 30 seconds.
  7. Plate with cheese and optional more salsa.
