Crispy spiced chicken over whipped feta and fresh tomato/cucumber salad. Only takes about 30 minutes to make. 44g protein and lean until you add pita. You can leave out the pita if desired, but I love it

Ingredients
1 lemon
1 Roma tomato, diced
1 tbsp olive oil
1 tsp cumin
1 tsp smoked paprika
1/2 lb boneless skinless chicken thighs
1/3 cucumber, diced
2 garlic cloves, minced
3 tbsp Greek yogurt
4 oz feta cheese
Pita and parsley to desire
Instructions
Start by making the whipped feta. Mash and whip together feta and Greek yogurt with half the lemon squeezed over the mixture
Toss the tomato, cucumber, parsley, a little more lemon and some olive oil together. Add salt
Cut and season the chicken. Mix together the paprika, cumin, salt and pepper. Cook until done through
Warm and cut pita to your desire. Plate per video and enjoy!
