Cilantro lime chicken, Cilantro cucumber salad, roasted potatos, and pan fried black beans?

Easy Weeknight meal

Ingredients

  • 1 can black beans
  • 1 lb chicken breast
  • 1/2 lb russet potatos
  • 5-6 seedless cucumbers
  • Oil
  • Spices and salt
  • Sprig of parsley

Instructions

  1. Slice chicken into 1/4 inch slices. Add 1-2 tbsp olive oil. 3-4 tbsp lime juice and 1/2 chopped sprig of cilantro leaves. splash of soy sauce for umami. 1 tsp of salt per lb of chicken. black pepper. a lot of cumin, garlic, black pepper, and onion powder, 1/2 tsp chili powder. mix and let sit for 30 minutes. then pan fry on medium heat on preheated pan, fry until GB&D on both sides. should be roughly 3-5 minutes per side since its thin.
  2. Drain and rinse black beans. Finely chop a couple tbsp of onion. Saute onion in pan on medium heat until translucent, add black beans and season with salt, pepper, cumin, garlic, black pepper and chili flakes. fry for a couple minutes then add 1/2 cup of water and stir in chicken bouillon. Mix and sauté for like 10 minutes. water should reduce a bit. smash some of the beans to thicken the mixture.
  3. Chop 1/2 lb of potatos into 1/2 inch cubes. Toss with 1-2 tbsp of olive oil. Season with salt, pepper, garlic, basically any seasonings that sound good. Airfry at 400 for like 12-15 minutes making sure to shake it every 5 minutes to get good coverage of browning.
  4. Lastly. wash and slice cucumbers into thin medallions. Add 1/2 of chopped cilantro. for dressing mix 1 tbsp of olive oil, 2-3 tbsp of lime juice. like 2-3 tbsp of greek yogurt. and season with salt, pepper, garlic, and a pinch of sugar. Toss together
  5. plate and enjoy. i highly recommend the salad and dressing it turned out much better than i thought.
