Easy to marinate and cook pork dish. Made in just one pot and with minimal effort. The flavors in this blended together wonderfully as Mexican cuisine always does. Chiles de arbol can be substituted for more chili powder or red pepper flakes. Thank you to @Emma for making the guacamole
Marinate pork in mixture of orange juice, lime juice, cumin, oregano, minced garlic, chili powder, salt and ground up Chiles de arbol. I’d recommend letting it marinate at least 8 hours
In a Dutch oven or pot, sear the pork each side until good color shows. Take the pork out and set aside
Sautee 2-3 cloves of garlic and half a white onion chopped in the pot until the onion begins to become translucent. Drop tomato paste and rice into the pot and sauté for another 2 minutes or so
Add in chicken stock and marinade leftovers into the pot, return pork chops to the pot and cover until liquid is reduced and rice is cooked through
Plate by putting down rice mixture, then pork chop. Plate guacamole (made from avocados, Roma tomatoes, garlic powder, onion powder, lime juice and salt) next to the rice/pork. Top with crema and garnish with green onion. Enjoy!
