This is a gochujang and cottage cheese base broth with some ground beef and veggies. I haven’t tried cottage cheese before so this was a nice way to ease into trying it. This did not take me to long so it’s a good week night recipe as well
Blend the cottage cheese, broth, and gochujang together. Add to a saucepan over low heat just to warm the sauce.
Before you start your beef, you will want to cook the rice so it times out at the same time as everything else. I washed my rice and used a rice cooker by putting equal parts rice and water. You can use your preferred method. If you have the bags of rice then you can wait till the end to cook the rice.
Heat a pan on medium heat and add some olive oil to it. Add in you broccoli and green beans and mix these around in the oil. Add a little salt and pepper and then cover them with a lid so they can steam. Stir occasionally.
Heat a pan over medium-high heat with cooking spray or some olive oil before adding the ground beef. Brown one side for 2-3 minutes before breaking apart and fully cooking.
While your beef cooks, mix the maple syrup, rice vinegar, coconut aminos, sesame oil, miso paste, and white parts of the sliced green onions together.
Add the sauce to the cooked beef, and stir the beef in it, then cook for another 1-2 minutes untouched until the sauce begins to caramelize on the bottom. It should be nicely browned and crispy.
To make the bowls, fill each with 1 cup of rice, 1 cup of broth, and 1/4th of the ground beef. Garnish with your veggies and the green parts of the green onions. I also sprinkled on some chili onion trader joe’s powder. You can use sesame seeds too, we just didn’t have any.
