Spinach omelette burrito

Little experiment I whipped up for brunch today. Proud of how it turned out!

Spinach omelette burrito

Ingredients

  • 1 oz melty cheese
  • 1 Tortilla
  • 1/2 cup Spinach
  • 2-3 eggs
  • 4-5 slices of your deli meat of choice

Instructions

  1. Dice your deli meat and cut your spinach for prep
  2. Turn a pan on medium high heat and add olive oil. Sauté turkey for 3 minutes then add spinach and finish sautéing for another 2 minutes
  3. OPTIONAL: in a separate pan, heat up your tortilla on low heat to start melting the cheese
  4. Add your 2-3 eggs to the first pan to create your omelette
  5. Remove all ingredients from the pan and assemble
