Chicken Au Poivre

I’ve been seeing this Chicken Au Poivre recipe on my feed a lot and wanted to try it out for dinner the other night!

Ingredients

  • 4 Chicken thighs
  • 3 cloves Garlic
  • 1 Shallot
  • 3 cups Heavy Cream
  • 2 tbsp Fresh Rosemary
  • 2 tbsp Olive Oil
  • Salt
  • Black Pepper
  • 1 Broccoli
  • 2 Russet Potatoes

Instructions

  1. Preheat oven to 375 degrees. Prepare the chicken by seasoning it with salt, pepper and drizzling some olive oil over top. Once oven is ready then put chicken in for 20 minutes.
  2. While chicken is cooking, pour heavy cream into a separate bowl. Dice the shallot, mince the garlic and the rosemary and add everything to the bowl. Then, add salt and pepper and mix.
  3. In a separate pot, bowl water to make the mashed potatoes. Peel the potatoes and cut up into smaller sizes. Once the potatoes are ready, set aside and mash them. Add salt, pepper, some butter and some heavy cream to make it a smooth consistency.
  4. After 20 minutes, remove chicken from oven and pour heavy cream mixture over the chicken thighs making sure to evenly pour it over the chicken. Increase oven to 400 degrees and cook chicken for an additional 35-40 minutes. Make sure to baste the chicken with the sauce every 10 minutes or so.
  5. Once chicken is cooked, plate with the mashed potatoes and broccoli and pour some additional sauce over top, and you’re done!
