Sweet Potato and Chickpea Curry with Rice
Sweet potato and chickpea curry!!

Ingredients
- 1 can of chickpeas
- 1 can of coconut milk
- 1 large sweet potato (or two small ones)
- 1 tablespoon of freshly grated ginger
- 2 generous tablespoons of cumin
- 2 generous tablespoons of turmeric
- 2-3 tablespoons of olive oil
- 3 generous tablespoons of curry powder (curry powder of your choice)
- 4-5 cloves of garlic
- A half of an onion
- Salt and pepper to taste
Instructions
- Chop up your onion and sweet potato
- Mince the garlic cloves
- grate the ginger
- Put a deep pan on medium heat and add your olive oil and then your onion. Let the onion cook until itโs translucent.
- add in your garlic and ginger and stir around for about a minute
- add in all the seasoning and still in. I added a little extra olive oil at this point .
- add the sweet potato and chickpeas and stir to get the seasoning on them.
- add in the coconut milk and a little water and let to sweet potato simmer in the coconut milk until it is tender (about 25 minutes)
- serve over rice or whatever you prefer and enjoy! :)
