Sweet potato and chickpea curry!!

Sweet Potato and Chickpea Curry with Rice

Ingredients

  • 1 can of chickpeas
  • 1 can of coconut milk
  • 1 large sweet potato (or two small ones)
  • 1 tablespoon of freshly grated ginger
  • 2 generous tablespoons of cumin
  • 2 generous tablespoons of turmeric
  • 2-3 tablespoons of olive oil
  • 3 generous tablespoons of curry powder (curry powder of your choice)
  • 4-5 cloves of garlic
  • A half of an onion
  • Salt and pepper to taste

Instructions

  1. Chop up your onion and sweet potato
  2. Mince the garlic cloves
  3. grate the ginger
  4. Put a deep pan on medium heat and add your olive oil and then your onion. Let the onion cook until itโ€™s translucent.
  5. add in your garlic and ginger and stir around for about a minute
  6. add in all the seasoning and still in. I added a little extra olive oil at this point .
  7. add the sweet potato and chickpeas and stir to get the seasoning on them.
  8. add in the coconut milk and a little water and let to sweet potato simmer in the coconut milk until it is tender (about 25 minutes)
  9. serve over rice or whatever you prefer and enjoy! :)
