Blini Recipe!

These are called Blini and are very similar to crepes or thin pancakes. I typically eat them with jam but you can try honey, maple syrup, sour cream, nutella, etc. The options are endless!

Blini Recipe!

Ingredients

  • Boiling water
  • Butter
  • Egg
  • Flour
  • Milk
  • Olive Oil
  • Salt
  • Sugar

Instructions

  1. Grab a big bowl and crack 1 egg into the bowl.
  2. Put 2 tablespoons of sugar into the bowl, followed by 2 pinches of salt. And then mix everything together.
  3. Pour 1 cup of milk into the bowl and mix. Then, pour 1 cup of boiling water into the bowl as well and mix. (I used a tea kettle to heat it up faster)
  4. Next, add 1 1/4 cup of flour to the bowl and mix. You may need to add more flour depending on the consistency. It is normal for the batter to be much more runnier than normal pancakes.
  5. Add 1 spoon of Olive Oil and mix everything together. The batter is now done! It should not stick to your spoon/whisk.
  6. Heat up a smaller pan on medium heat and put a bit of butter in the pan in between each blini to ensure it does not stick.
  7. Cook one side until you notice bubbles forming and/or the sides are starting to brown. Then flip with your spatula and wait until the other side is cooked. Have a plate ready nearby to put the blini on.
  8. Continue making the blini until you run out of batter. This recipe made me about 4 big blini because I used a bigger pan.
  9. Plate and spread your topping of choice, I used jam for these. Then roll them up, and they are ready to serve!
