Made this quick Chicken & Mushroom Risotto for dinner!

Ingredients
Arborio Rice
Chicken
Chicken Broth
Garlic
Mushrooms
Onion
Parmesan Cheese
Pepper
Salt
Instructions
Start by prepping and seasoning your chicken.
Cook the chicken until fully cooked and place to the side.
Cut your onion and mushrooms. Measure out however much rice you plan to make. In the same pan that the chicken was cooked in, start cooking the mushrooms, garlic and onion together. Season well.
Once veggies start to be cooked, put in arborio rice and very lightly toast it before adding in chicken broth.
Cover rice with chicken broth and leave to simmer. Season as well.
Once risotto is done (should take around 18 mins), mix in grated parmesan cheese, salt and pepper. Be sure not to overmix.
Plate risotto with cut chicken on top, grate parmesan and voila!
