Steak Fajita Bowl

A quick weeknight meal - steak fajita bowls!

Steak Fajita Bowl

Ingredients

  • 1 can of Black Beans
  • 1 cup of Rice
  • 1 Green and 1 Red Bell Pepper
  • 1 Jalapeño
  • 1 Onion
  • 2 Avocados
  • Cilantro
  • Cumin
  • Lime
  • Onion Powder
  • Paprika
  • Pepper
  • Salt
  • Sazón Goya
  • Steak

Instructions

  1. Wash and cut the veggies first. I used half a red bell pepper, half a green bell pepper, and half an onion. Dice around 1/4 of what’s left of the bell peppers for the beans. Dice less than half of the jalapeño and set aside. Start cooking a cup of rice as well.
  2. Season the steak, I used Sazón, salt and pepper. In a different pot, put in diced jalapeño and bell peppers. Then cook until soft and pour in can of black beans. I added some chicken broth to the beans as well to help them cook. Season beans with salt and some cumin.
  3. In another pan, start cooking the fajita veggies. I used salt, pepper, paprika and some cumin. Once ready, set aside and in the same pan cook the steak.
  4. Cut up the avocados, we had extra so I used them in a green sauce to top the bowl off. I made that in a blender using cilantro, the extra avocado, salt, pepper, a dash of cumin and lime juice.
  5. Start making the bowl by putting the cooked rice down first, followed by the black beans, then the fajita veggies and the cut steak. Then top with sliced avocado and some green sauce and you’re done!
