Camarones Al Ajillo

Made Camarones Al Ajillo yesterday for dinner! Quick, easy and flavorful!

Camarones Al Ajillo

Ingredients

  • 1 tbsp olive oil
  • 1 tsp cornstarch
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 2-3 tbsp of chicken broth
  • 4 tbsp unsalted butter
  • 6-8 cloves of garlic
  • Black Pepper
  • Cilantro
  • Juice of 1/2 lemon
  • Juice of 1/2 lime
  • Large Shrimp
  • Red Pepper Flakes
  • Salt

Instructions

  1. Start by prepping everything. Make your rice. Peel and devein your shrimp and pat dry. Season shrimp with salt and pepper.
  2. Chop up your garlic and cilantro separately. Set them aside.
  3. Heat the olive oil and butter in a pan over medium heat until melted and gently bubbling. Then drop in the garlic and cook it for about 30 secs until it is fragrant.
  4. Add shrimp and cook 1-2 mins per side. Sprinkle in the paprika, onion powder, garlic powder, red pepper flakes, salt and pepper. I recommend mixing all of the spices together in a bowl beforehand for a more even distribution.
  5. Mix the chicken broth with cornstarch and pour into the pan. Make sure you are stirring consistently so that the sauce thickens.
  6. Finish the shrimp and sauce off with lemon juice and cilantro. Mix the rice with some cilantro, salt and lime juice.
  7. Plate it and voila!
