Visited my brother and his gf in CLT this weekend while I was getting a new tat, decided to cook for em while I was visiting! Herbs de province are the GOAS (greatest of all seasonings) and you cannot convince me otherwise! This was my first time cooking steaks in a home kitchen so I probably didn't do it perfectly, but I just used techniques that I've used in restaurants/working with other proteins.

Ingredients

  • 1 cup Polenta
  • 1 pepper
  • 2 Prime NY Strips
  • 2 Shallots
  • 6-7 (🤯🤯🤯) Okra
  • Crème fraiche
  • Herbs de province
  • Red wine

Instructions

  1. Dice the peppers and shallots and cut the okra into half-moons while you wait for some water to come to a boil for polenta. Season the steak with herbs de province and salt on all sides.
  2. Sear the steaks over medium-high heat using a high smoke point oil (I used grapeseed) for a few minutes on each side. Then toss those mfs in the oven at 350°.
  3. In the same pan that the steaks were in, reduce heat and deglaze with red wine and toss in half of the shallots. Add crème fraiche and butter and reduce until the desired texture is accomplished.
  4. Once your water is at a boil, reduce heat to low and whisk in your polenta. Cook for about 5 mins, or as directed on the container. Once it’s almost done, throw in some crème fraiche and/or butter.
  5. Sauté the veggies (including the rest of the shallots) over medium heat. If need be, reduce the heat to low while waiting on the steaks to reach your desired temp.
  6. Plate and pour the pan sauce over top!
