Sharlotka - Eastern European Apple Cake

Ingredients

  • 1 cup flour
  • 1 cup sugar
  • 1 tsp vanilla
  • 3 eggs
  • 3-4 large apples
  • Butter to grease cake pan
  • Powdered Sugar

Instructions

  1. Beat the eggs, sugar, and vanilla with a hand or stand mixer for 5 mins on medium-high speed. It should turn out thick and almost pale in color.
  2. While mixer is running, peel and cut your apples into thin slices. After cutting all your apples, grease your 8” cake pan with butter. Begin placing the apples into the cake pan into whatever desired pattern. I put about 3 apples worth of slices and left the rest to finish the top of the cake.
  3. After 5 mins of mixing the egg, vanilla, and sugar, gently fold in the flour. Once fully mixed together, pour into cake pan with the apples. Tap the cake pan on the counter to ensure the batter spreads evenly.
  4. Continue stacking the apples until no more remain. Arrange the apples on top.
  5. Bake at 350 F for 50-60 mins or until the top is browned and a toothpick inserted into the center of the cake comes out clean.
  6. Let it cool completely before removing from the cake pan. Upon serving, sprinkle powdered sugar on top and voila!
